Greek Pita Pizzas

These killer little pizzas are a tasty alternative to your unhealthy-stomach-turning delivery option. They are a blend of vegetables, homemade hummus, and sprinkled with feta all atop fluffy pitas...




Adapted from Dashing Dish

Serves 2 (Well depends on who the "two" are)

4 wheat pitas (either mini pitas (double if using mini) or regular size)
1 cup hummus (recipe follows)
1/2 cup cherry tomatoe, diced
1/4 cup red onion, diced
1 TB tomato sauce
1 chicken breast, grilled or sauteed, diced
1/4 cup broccoli, cut into edible pieces
1/4 zucchini, diced
1/4 eggplant, diced
1/2 feta cheese

1. Preheat oven to 375 degrees F. Layout parchment paper (allows for easy clean up) on a baking tray. Spread the pitas evenly across tray, do not overlap.
2. Add hummus with the 1 TB tomato sauce and stir until well mixed. Spread over the pitas, leaving 1/2 inch for "crust".
3. Toss the remaining ingredients over the pizzas, to your liking. Feel free to remove certain ingredients or add additional ones. Whatever serves your fancy.
4. Bake for 8-10 minutes. Don't burn your mouth... let cool for a couple of minutes!


Hummus
1 can chickpeas
1 TB Tahini
2 tsp lemon juice
1 tsp minced garlic
1/2 tsp cumin
1/2 tsp sea salt
1/2 tsp pepper

1. In a food processor mix all ingredients. Blend until chickpeas are completely smooth.
